Why buy granola when it is so easy to make? Making your own allows you to select the ingredients you like, adjust the sweetness and eliminate preservatives. This recipe uses Martin and Sons Whiskey Barrel-Aged Maple Syrup.
INGREDIENTS
4 cups old-fashioned rolled oats
1 cup sea salt dry roasted pistachio kernels
1 cup raw pumpkin seeds, hulled
1 cup shredded unsweetened shredded coconut
½ cup Martin and Sons Whiskey Barrel-Aged Maple Syrup
½ cup olive oil
¼ cup light brown sugar
¼ teaspoon kosher salt
½ teaspoon cinnamon
½ cup sliced almonds
¾ cup chopped dried cherries
STEP 1
Preheat oven to 300 degrees. In a large bowl combine all ingredients except almonds and cherries. Spread mixture on a rimmed baking sheet in an even layer and bake for 45 minutes, stirring every 10 minutes, until golden brown and well toasted. Add sliced almonds after baking for 25 minutes.
STEP 2
Transfer granola to a large bowl and add cherries, tossing to combine. Store in an airtight container.
This recipe is easy to modify. Hulled pistachios may be used in place of salted dry roasted pistachios. If you don’t like pistachios you could try the recipe with pecans or another nut. Dried cherries could be replaced with other dried fruit.
Granola is great with yogurt, ice cream, or ricotta and berries.
