Keys to our success are careful attention to details and maintaining a small batch approach to cooking maple syrup.  Our sap is certified organic and we follow organic principles in our cooking process, including the strict use of food grade stainless steel equipment.  We are thorough in our cleaning protocols, whether that be cleaning lines at the beginning and end of the season or cleaning tanks and the evaporator pans between batches.
